A Salad with Substance


I’m a great lover of salads, but with this weather, a flimsy bit of rocket just won’t do. Here is a belter of a salad, good for pre workout, post workout, and general consumption. 

This is gluten-free, protein-full and can be made vegan if you omit the eggs.

Serves 2. 

Ingredients 

125g quinoa (250 ml water)

2 hardboiled eggs, peeled and sliced. If vegan, add some toasted pumpkin seeds instead. 

1 avocado, sliced

lemon juice

100g mushrooms, sliced

2 sticks of celery, chopped

2 inches cucumber, chopped

6 black olives

Black Pepper and Salt

Method

Cook the quinoa- Bring to the boil and then simmer  until all the water is absorbed. When the quinoa is cool, mix all of the ingredients together, season and serve.
