National Pizza Day


In honour of #NationalPizzaDay, here are some vegan ideas. If you’re short on time, you can buy a variety of remade pizza bases at most supermarkets. If you’re gluten-free, they usually have an option in the free-from section.

Vegetable Paradise

Ingredients

  • Tomato Purée
  • Vegan Cheese
  • Courgette
  • Aubergine
  • Red Pepper 
  • Black Olives, chopped

Method 

Wash and slice the vegetables, and roast them with a sprinkle of olive oil until nice and soft.

So for all of these pizzas, you’re going to need to find a good tomato purée and a vegan cheese. 

Spread the pizza with the purée and sprinkle the cheese on top of it. Add the roasted vegetables, olives and seasoning, and cook until the crust is nice and crispy and the cheese is melted. Serving suggestion- sprinkle a little balsamic vinegar over your masterpiece. 

Caramelised Red Onion, Rocket and Mushroom

Ingredients

  • Tomato Purée
  • Vegan Cheese 
  • Chestnut Mushrooms
  • Rocket 
  • Caramelised red onion chutney (waitrose does a particularly nice one)

Method

Go through the usual process with the base, purée and cheese. Chop up as many mushrooms as you like, sprinkle some olive oil in a frying pan and sauté until they are lightly cooked (don’t overdo it). Arrange the mushrooms on your pizza. With the chutney, you can either dollop some evenly over your pizza, or zigzag some over it. I would avoid spreading it evenly over your pizza, it’s much more fun to have a variety of flavours. Cook until base is crispy and cheese melted.
